My wife, Fran, and I had gone grocery shopping. Actually, Fran had done the shopping while I went for a walk outside at the shopping center. On our way home she asked, “What is white whole wheat flour?” I told her that I had heard of white wheat flour and supposed that it probably looks like unbleached flour. Actually, there are over 1000 varieties of wheat. The one most commonly used in our country is Turkey red wheat, a winter wheat. This was grown primarily in the Plains States of the Midwest. Wheat has been under cultivation by man for 10,000 years, and there has been a lot of cross breeding and development of different strains. Fran decided that she will not try the white whole wheat flour (doesn’t trust it), and stick to the nutritious whole wheat flour that is hopefully still Turkey red wheat.
